County Kookin' | Frog Laigs

On my previous trip to South Carolina, I picked up a country cookbook at one of the restuarants in which we ate. The cookbook is called, "Taters 'n Maters -N- Black-eyed Peas."


Here's a funny little recipe from it:


FROG LAIGS


Furst, you dresses the big ole croakin' thangs by whackin' the laigs off n' skinnin'...throw the resst uv the pore than to the cats. Wash'em n' soak in salt watah... roll in flour, salt n' pepper like you duz a fryer cuz theyz is the "chicken uv the creek!"


Git you grease hot in a skillet... drap'em in n' quickly put sump'n on top to keep em' frum jumpin' out at furst... fry delikately!
